• Yukina Hirai

  • In 2013, Yukina opened her first cafe, forucafe, as a university student and has since managed five cafes in Tokyo for over a decade. She also serves as an advisor to the Haruki Murakami Library cafe at Waseda University and has contributed to developing several dining concepts in Japan. In London, she successfully launched five Japanese concept shops — Sushi, Matcha, Ramen, and Curry — at Mercato London within a year, gaining valuable experience in bridging Japanese culinary culture internationally and bringing it back to Japan.

“Food is a universal language that brings people together; I'm dedicated to sharing the essence of Japanese culture through every dish.”
